Stuffed Peppers

Stuffed Peppers

1-2 Red onions chopped 

Chopped colored peppers the tops cut off the tops of the peppers you are going to stuff and one more pepper if you like more pepper like I do.

1/2-3/4 cup cooked quinoa 

1 TBS Chili powder 

Jalapeño finely chopped 

1-2 tsp Garlic powder

1 -2 TBS Sariacha (more or less depending on how spicy you like it.)

One can  black beans

Six to  eight peppers  tops cutoff  and cleaned out

In a sauce pan sauté the onions and peppers until the onions are well done and starting to brown.  About half way through the saluting add the jalapeños. Add the chili powder, and garlic powder, and 1/2 to 3/4 cup water and sariacha sauce along with the cooked quinoa and let simmer, stirring frequently until the liquid is gone.

Remove from heat and stuff the peppers you have prepared.

Bake in a 350° oven for 15-20 minutes, until the tops are starting to brown and serve. Makes 3 to 6 servings. We usually eat two peppers each, depending on the size of the peppers.



Darkness is Settling on the Earth

 We are entering a time of darkness that in some ways makes me think of the Dark Ages to the Medieval times. Our government in dark and not of the people, for the people, and by the people. It is instead of the darkness, for the darkness, and by the darkness if all I have heard is true. 

Our Constitution is in danger, as are our rights and those things guaranteed by the Holy Father.  Religion is under attack, as is the church and the Bible. 

Censorship rules and those who choose to speak out are silenced or banned.

It is a sad time for Americans and America and the world.

Crimes against humanity reign over common decency and morality. Immoral behavior is glorified and sanctified. Acts that go against the Ten Commandments of God be lifted seen as good, when in reality they are sins that are evil. People are worshiping idols and false gods, instead of our one true God, the Creator of heaven and Earth.

I weep for our nation and the world. I pray that God will have mercy on our land and on our people, and that he will open the hearts of those who have wandered into the darkness and let them see the light.

I pray for our outgoing president who has done so much good for our country and our people and helped negotiate peace in the Middle East. 

I pray for our incoming president that the darkness be lifted off of his heart and that he see the true God and the right way to help our country instead of continuing to wander in the darkness under the influence of darkness. 


Lord God Our Father, I thank you for this day, and for life. I ask you to please watch over our country and its people during this time of descent into darkness. Please protect us all from the evil that approaches and keep us safe in your arms. Protect us from the plague that has attacked our land and the world and from those who are out to destroy us. Please watch over our military and our police officers and bless our president and guide our incoming president to do the right things for our country and all of its citizens. In Jesus Name, Amen..
